Chocolate (fudge or otherwise) Brownies
I do a lot of cooking (if you follow my Instagram stories, you’ll know this), and I’m usually in the habit of searching for a recipe online that fits my random list of ingredients from the fridge. With that being said, I absolutely hate scrolling through ridiculously lengthy blogs with a huge preamble before reaching the desired recipe… so without further ado, this is my current favourite brownie recipe. (They’re so easy my 10yo makes them).

200g granulated sugar
70g salted butter
2 eggs plus 1 egg yolk
1 tsp vanilla extract
80mls vegetable oil (we use rapeseed)
75g cocoa powder
pinch of baking powder
1 tbs cornflour
150g (or more) of Mhudge, or chocolate chips, or your favourite nuts -
Preheat the oven to 160c and line an 8” by 8” tin with baking paper.
In a large microwave safe bowl, add the sugar and butter and microwave for about 1 minute until the butter is melted.
Beat in the eggs, egg yolk and vanilla extract. Then add the oil and cocoa powder and beat again. (All this beating I do with a rubber spatula, you don’t need a mixer).
Add the remaining ingredients (flour, baking powder, cornflour and Mhudge bits), and stir.
Spread the brownie mix evenly into the lined tin, pop it in the oven and bake for about 30 mins until the brownies don’t wobble when you shake the tin(!).
Let the brownies cool completely before cutting (we normally cut it into 20) and serving / having your kitchen come under siege by the tweens.
